– Olive oil
– Salt and pepper to taste

– Jalapeño slices (optional)
Instructions
Creating Taco Potatoes is simpler than you might think! Just follow these straightforward steps:
1. Preheat Oven: Preheat your oven to 425°F (220°C).
2. Prepare Potatoes: Wash the russet potatoes under cold water. Prick each potato several times with a fork. Rub them with olive oil, and sprinkle with salt.
3. Bake Potatoes: Place the potatoes on a baking sheet and bake for 45 minutes or until tender.
4. Cook Meat: While the potatoes are baking, heat a large skillet over medium heat. Add the ground beef and cook until browned.
5. Add Seasoning: Drain excess fat, then stir in the taco seasoning and a splash of water. Cook for an additional 5 minutes until well combined.
6. Remove Potatoes: Once potatoes are done, remove them from the oven. Let cool for a few minutes before cutting them open lengthwise without splitting them completely.
7. Fill Potatoes: Fluff the inside of each potato with a fork. Add a scoop of the taco meat mixture into each potato.
8. Top with Cheese: Generously sprinkle shredded cheddar cheese over the filled potatoes.
9. Melt Cheese: Return the loaded potatoes to the oven for about 5-10 minutes, or until the cheese is melted and bubbly.
10. Add Toppings: Remove from the oven and top with shredded lettuce, diced tomatoes, sour cream, salsa, and any additional toppings you desire, such as cilantro or jalapeños.
