2. Place chicken breasts in the marinade and let it sit for 15 minutes.
3. Preheat the grill to medium-high heat.
4. Grill chicken for 6-7 minutes on each side or until fully cooked.
5. Remove from heat and let it rest for 5 minutes before slicing.

Quinoa Mediterranean Salad

1. In a pot, bring the vegetable broth or water to a boil.
2. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
3. Remove from heat and let it sit for 5 minutes; then fluff with a fork.

5. Drizzle with lemon juice and olive oil; season with salt and pepper to taste.
